what source type is your ODBC driver connecting to and what driver and version are you using? That usually determines what extra features are available.

The source system being accessed is Microsoft Dynamics, which runs on Dataverse. This Dataverse is replicated to a Synapse Analytics SQL endpoint. Communication with this endpoint is done via the 'ODBC Driver 18 for SQL Server,' as this allows for managed identity access to be configured.

in theory that driver should be capable of delivering datetimeoffsets from Synapse. As far as I am aware there is only an option in the ODBC driver itself to "Use regional settings when outputting currency, numbers, dates, and times”. I do not think that will solve this, but you could try.
It might be worth connecting to the ODBC source with another tool to try and see if you can get those fields there.
